The tank should carry 4.2 gallons. .7 gals of that is reserve. Reserve is a lower inlet in the petcock that allows the last bit of fuel to be drained to the carbs. Maybe some one did body work to your tank. Tap around the top to see if is metal or filler.
You say 2.7 only. Is that by gas pump or did you remove the tank, drain it completely, and then refill by hand? Could be that your petcock fuel strainer is blocked by gunk.

I have to ride over a large bridge to get to work and unless my bike is topped off it will put likes its not getting enough fuel going down the bridge because the petcock "in the on position" is fairly high and in the rear of the tank. and the mesh screen on the petcock could be gunked up...but on flat ground I get alteast 140 U.S. miles before I have to put her to reserve lol..

I see u show you are from Indy, so I doubt the Imp Gal thing is the issue but I wont rule it out. Try this, drive until you run out of gas in the "on" position. Then, switch to reserve and run until you really are out of gas (being mindful to have a buddy with a gas can or trailer near by). Now that you have "ran out of gas" in the reserve position, the tank should be bone dry. Open the filler cap and look in there, if there is more than 2 or 3 drops of fuel left, your petcock screen is clogged causing you to "run out" of fuel prematurely. Clean / replace petcock and on the way you go. Now that the tank is bone dry, fill it back up and measure how many gallons it took (at the pump, trying to measure with gas cans will get you only semi close at best).
As a side note, I have a +1-2 gearing with a 530 chain and an aluminum rear sprocket (bought it that way). I almost always hit reserve between 120 and 135 miles, I have never found out how far I can get on reserve. This is the same for canyon carving and for highway cruising for me.
