I bought an extra guage set off ebay as well as the electronic harness that plugs into the back of the speedo..now when I change my bodywork from "street" to "track" I just have to remove the bolts securing the upper fairing bracket and do the swap, plug in the wire harness to the extension..and I am done!!

Looks very stealthy. Job well done. Gonna do rearsets by chance? I would also go with CRG Breakaway levers for the track. I hate to say it but I am buying a salvage 04 Suzuki 600 for a trackday bike. There are just too many extra parts available for the Suzuki 600s on Ebay and other places.
