Default some questions about adjusting and jetting

ive been reading about jetting and shimming and how many turns the mixture screws should be turned and im a little confused. the only reason im bringing this up is cause i believe that i might be running a little lean till about 6k then she fattens up and runs great. so if someone could explain what each adjustment "via shimming and setting mixture screws and jetting" affects the power in what way would be very helpfull and interesting. another thing that i was wandering was ive been looking at the jet kit sets you can buy but what all is actually in one. anyway sorry about all the ?s lately just trying to understand our machines a little better.
thanks again
james

now im not sure if all the bikes run the same, but mine does the exact opposite. it runs rich while both jets are spraying and then it leans out up top like it should. do you know if its lean or rich for any particular reason?

Happy- if you're shimming the stock needles you're probable running rich at low speed. The biggest thing about "jet kits" is the needle. It has a slimmer taper than stock. The needle blockes the main jet circut. As the slide goes up it progressively opens up the main jet. If you raise the starting position of the needle you have more gas from the main jet at low throttle settings- rich condition.
I have a Dyno-Jet stage 1 kit. Slow jet is#40 Main jet #122 0r #124, can't remember. The Dyno-Jet needles are set in the center position with the Dyno springs on top of the slides. I have a Vance and Hinds SS2r exauhst system and K&N air filter. The idle mixture screws(under the carbs toward the front) are at the stock setting, 1 3/4(?) turns out. These screws are critical for eaze of starting, especialy when the engine is warmed up. Don't open them too much.
Yes, my bike runs like it just came from the factory,... no, better.

well the only reason im wandering about the jetting is this bike i just bought has everything your has pluss its had a 1049cc kit and has been stroked too so it has to have a jet kit in it because it runs stupid fast and my only complaint is it dont really hit its power band till like 6k is this normal on these bikes seems a little high to me but who knows
