Stainless rivnuts are not as strong as steel ones - I would just use the standard ones.

The Pnumatic tool is certainly nice, but if you're going to only set two, either buy the bolt hand tool or see if someone local has the pnumatic tool you can borrow. Amazon will sell you a simple bolt tool for $15, or a whole set of bolt tools, step drill and rivnuts for $35. It's hard to set a rivnut out-of-square as the collar pinches the metal around it.
