Mate, That sucks!
Are any other forum members near enough to go and lend a hand?...or at least pour the beers I'd pop over but it's a bit far. My last resort would be to see what another seat's worth and just cut my way in. If you were gentle you could probably get away without too much damage.
Before that I'd look at going in from underneath, through the rear mudguard thingo. You could probably get to where the catch is through there? Also, any damage wouldn't be visible if you didn't fix it straight away.

you must be tearing lumps of scalp of by now mate.
My seat is a bit stiff to get off sometimes. I just have to turn the key a bit harder than would seem normal and up she pops.
Give me a call and I'll at least give you a shoulder to cry on. I'll talk you through it while I replicate your actions with my bike. There's got to be a way.....

I suspect the metal rod for releasing the seat has either been put back the wrong way (ask me how I know) or isn't connecting to the mechanism somehow. I don't think this is just a sticky seat latch.....
If everything else has been bolted back I see no alternative BUT to cut a hole under the seat mechanism our 'Enry, drastic as it may sound, and may mean removing the back wheel to do it.
What other option is there ?

Right on Pete ....... the rod is in backwards ...... I know this scenario too
So drill a hole big enough for a flat head screw driver under the rear fender/mudguard
2 cm's left of dead center (looking from rear forward ) where the oval part meets
the squared off part in with the flat head and pry back the latch ..pop off she comes !
The put the rod back on facing the right way and a rubber tire patch on the
little hole never be seen anyway ....... not like you are drilling a much valued
faring or something.
