not only, the french ones have a different head with smaller diameter valves - you knew that?

My boots are ok, when I bought her she was 70ps in the documents, I had to change the camshafts, the ignition module. Somebody, however, had removed the boots still before as you are saying.

Yesterday I bought a set of SC57 coils with a wiring loom, paid 25 bucks, you think it is a good investement really? will check it out soon.

Yes, a very good investment. You will still need to up the jetting to get rid of the lean condition.

There are a few places I can go that have non E-gas. Even with my larger jets, it runs ok on it. Bike starts so much quicker and runs so much smoother. Without any engine modifications, I doubt it would run any better, fuel injected or not.

you can use o FIAT jets from the old SOLEX carbs, they are identical and the cost is like.... 1 dollar each. They are available in many sizes... as for the pilots, I don't think I will find anything larger than 45

You can get the jets at CarbJetKits.
Here is the stick coil LINK.
Stick coil how to LINK.

The jetting and coil mod ran less than $100 usd. HUGE upgrade in how she runs.
You could still fuel inject it but the bird was manufactured before the E-gas so, trying to map it correctly may not be a easy as a simple re-jet.
I'm running a similar setup this year with the larger Main to go with the stick coils and straight through (no baffle) Delkovic pipes. She's been running heaps better than she ever did BY FAR. They seem to really like big jets!

If you want to save some $$ and know exactly what jets you want, order them in virtually any size you want at jetsrus.com

They also have metal restrictor plates in the boots too. News to me that the
head and valves were different as prior members that pulled restrictor plate
inhibited carbs never mentioned a continued performance impediment after doing
so. I must track down the Guy and ask.

at my altitude they recommend 125 mains, I even have a set but I don't think it is going to help with idling... and... giving her bigger mains will of course boost fuel consumption a bit.... not really desirable.....

By the sound of things I reckon you should have a crack at the fuel injection even if for no other reason than showing it can be done.

Some people like doing jigsaw puzzles and spend many hours on them just to see a larger pic of whats on the box, your hobby at least will be of some use.

I look forward to seeing lots of pics of your project.

They recommended the smaller mains for me as well, and once I had everything adjusted properly, carbs calibrated, etc, she ran well. Runs better with this exhaust and bigger mains, though: Idles nice and smooth with a good rumble at 1000-1100 and has more grunt at higher rpms. If yours isn't, there's still something else going on.

As far as mileage with the bigger mains, that all depends on how you drive the bike. It will still get over 40 mpg if I take it easy.

A nice comparison might be the early vs late Blackbirds. Early 'Birds with carbs were supposedly faster than the later FI version, which was smoother. Those guys should be able to give you some insight about what to expect with FI.
