pipe and jetting help please

My brother has a 2000 cbr600 f4 and was wondering what the best way was for jetting and piping. I've heard a stage 1 kit with a vance & hines pipe is a good bet. We have a mechanic who can do all the work, just need to know what to buy... Thanks!

You just asked an insanely loaded question. The differences between all the pipes and jets and whatnot are in the single digits in regards to HP boost, and there are a lot of variables.
Generally speaking, whatever pipe you get, make sure you get the FULL PIPE, not just the "slip on." You want the manifold all the way down to the exhaust. Sometimes they call this a "race exhaust" or "full race kit."
With jets, if you're going to be racing it, or riding it at high RPMs on the highway consistently, you'd want a Stage 2, and make sure you spend as much time as necessary tuning the jets appropriately. A poorly tuned jetkit can absolutely reduce your performance from stock. If you're going stage 2, it's widely recommended you pick up a high-flow air filter, like a K&N (though it's hotly debated). Stage 1's don't need so much air and claim they can work with the stock filter, but if you're throwing that fat pipe on there and increasing your flow that much, I'd put a high-flow filter in, and tune the jets for it just in case.
