How easy do you think it would be to build my own crash cage... I can get pretty much any metal I need and I can weld MIG and Stick...

shouldn't be hard.

a few tips:
make sure to add sliders.
the higher the cage mounts, the less likely itll be to roll.
dont forget to give it alot of ground clearance.
