As far as the donkey comments; with his reaction, lack there of, leads me to think it wasn't his bike... IDK the story to this though.

Free revving a motor like that is hell on the internals - those parts and pieces are designed to be under a load. When you run it up to redline and then let off like that, the whole system starts freewheeling very awkwardly from a NVH point of view. Without the intended loads you can have some of these internals develop resonances and vibrations that they aren't designed for.
I'd be willing to bet something happened like the guy floated a valve, or something in the valvetrain came apart. But it isn't uncommon for drag racers to sit there on the line bouncing off the rev limiter and have a piston come out of the block - sometimes taking body parts with them.
