I have only a little non-specificadvice for lasagna is to be careful with the moisture, too little and it is dry, too much and it is soupy. Crispy edges are a plus. A little nutmeg in the cheese mixture does wonders. Cooking shortly after being assembled is best. Don't overcook the pasta, I have heaerd of people not even cooking the pasta first. Rub olive oil on the pan, it is more ceremonial than anything, but it can't hurt. Check internal temp with a meat thermometer. The hotmelted cheese is like napalm so don't eat it naked, that can lead to embarrassing scars.

Another good thing to do to make things different with the sauce is to add sausage (smoked or Italian), or maybe spinach. Hell, get creative and go for it.

Voodoo, another thing you may want to make that is just as good, if not better...baked Ziti.
Less prep work, excellent taste, and you use your favorite italian sausage
Remove sausage from casing and fry up in a pan breaking into chunks.
in a separate pot melt a tablspoon of butter with some olive oil and sautee 3 cloves of minced garlic, one chopped onion, and mushrooms...add two large cans of hunts tomato sauce or contandina sauce (NO RAGU!) add 1/2 tsp oregano, 1 tsp sweet basil, 1 bay leave, salt, pepper, and cooked sausage pieces.
Par cook ziti noodles, make sure they are still a little firm. put a layer of sauce in a baking dish, half of noodles, and layer slices of provalone cheese on top. add a thin layer of cottage cheese on top of that. another layer of sauce, the remainder of the noodles one more layer of provalone, and the rest of the sauce on top. bake in oven uncovered 350 for 30 minutes. Last 10 minutes you can add some shredded mozzerella on top.
Dont eat the bay leaf..
fresh garlic bread and a bottle of wine..

I've been thinking about this Voodoo...You probably are making dinner because you are in a romantic sort of mood, right? Now Lasagna is fine, don't get me wrong, but if you make eggplant rollatini you quiet demure wife will become terribly naughty.
The difference is:
peel eggplant, cut lengthwise into 1/4 inch pieces (they will be oval, not round). Dust with flour, fry in olive oil. Use the eggplant as a shell ie put the cheese mix on the egglant and roll.
Repeat with each piece. cover with sauce and parm/romano/mozz and bake.
It will make your sweet wife become double jointed.
Good luck

Thanks for the good thoughts, Frydaddy, but I just had sex recently and I am not due for sex for another four to six weeks according to my married sexlife calendar. Hahaha!!! I am scooping up all these good recipes and making them at some point. Ziti, Eggplant...I could be the next Gordon Ramsey.
