In a nutshell:
Local organized club racing, ie cmra, cmmra, asra ccs, etc. All under wera(where everyone starts in the US)
Then you have AMA which has several classes, superstock, supersport, superbike, formula extreme etc.
Several countries have their own version of AMA ie British superbike, Austrailia, etc.
Then you have FIM World Superbike, Supersport, etc.
And finally Motogp 125, 250, 800
Many consider AMA Superbike to be level with WSB. So much so that WSBK officials demanded that the WSBK race at Miller be run on a different track configuration than the AMA Superbikes ran on the same weekend. They did not want lap times to be able to be compared between the two. I thought it was pretty chickens**t on their part. They didnt' want Spies' and Mladin's times to blow away the "Featured" guys.

Go to http://www.roadracingworld.com/. It is a great site with breaking new, calender for all level events, and pretty much everything you need to know about roadracing.
