There is a guy locally that goes by the name 1hander, he modified his bike to have all the controls on one side of the handlebars. I don't know him, but I always thought it was awesome that his physical means don't limit his ability to enjoy his passion.

 

i seen a guy on i think it was ripleys believe it or not show few years back if you remember that. he only had one leg and was riding. just linked front and rear brakes to one (right leg). pretty cool actually. just dont forget to put it in first at a stop light...before you stop
