I recently have stripped all three of my calipers down (all bolts, seals, etc. removed). I am going to be sand blasting them. What is the best way to cover the areas that you might not want to blast or get sand in? Also, what areas should I cover for powder coating also? Any tutorial?

you want to plug and tape any opening, fluid holes, piston cylinders. After the PC'ing run a tap thru any threaded holes to clean the pc'ing out. Taping them usually works . Use good 3M tape too, cheap tape SUX!!
