Default Head gasket

So i took the head gasket off the head to prepare the surface for re-installation and I noticed there was three sheets of metal. Is the O.E.M. head gasket 3 sheets? Whats up with changing the gasket for performace reasons? That is usually to increase compression? That would be giving it a thinner head gasket I imagine. Any up side to a larger head gasket?

Normally, you change out head gaskets for performance reasons for nitrous, or anykind of high forced induction. I suppose the you possibly could get some more compression from lesser thick gaskets, but IMO, not worth it given the application.
