get the best time?
Well most bike start to fall off before the revlimiter. Each bike is different. You want to be in the highest part of the power band when you shift into the next gear. Thats why full throttle upshifts are the best. Helps keep the rpms from dropping.
truck...you ever consider reverse shift pattern or motogp shift if you haven't already?
it would save you a little bit during shifts as you just stomp down instead of up. will almost entirely eliminate any misshifts or false neutrals too.

Truck, my wife had a 06 600rr that she raced and did very well, but we put hers on the dyno. That will tell you peak rpm for each gear. But you wanted to know how to get the best time. almost every race I watched was won or lost in the first 60 feet. Reaction time-reaction time jump on the lights. how your bike reacts from the line is the biggest factor thought. is the front end strapped down? lowering links? stretched? Shift points will gain or loose small amounts. The launch from the line is where you should concentrate. My wife was running 9.15-9.17 in the 1000ft at 115mph. Her 60 ft times were around 2.10-2.25. And she had only been racing for less than a month. I made three passes on it and ran 8.80 @117mph. Her bike was completly stock except for the front end strap and rear lowering link, no pipe no power commander. my 60ft times were around 1.78
The front strap keeps the forks from extending during accelaration. when you launch all of your momentum goes to the back and the forks extending helps the weight transfer. With the strap it keeps the forks from moving = less backward momentum= less wheeelies.
