I vote Flatt Black! I just love the look. You could get a helmet to match as well.

How does that chalk board paint hold up to gas and such?

That's a pretty sweet idea, but I wouldn't want it to bubble off at the gas station.

I'd say gloss, personally when I see a flat black bike it just think the person was too cheap to do it right. Not saying flat cant look good cuz it can it just looks cheap to me.

I too thought about going flat black with my bike. The only downside to it is that it looks like the bike is waiting to get painted. Check out this thread about matte black bike paint jobs. It gives the advantages/disadvantages to them. Here!

I recently finished up a paint job on my 01 f4i. I bought all flat black paint and was dead set at leaving it that way......that is until I figured out that finger prints and oils are attracted to it like bees to honey. I ended up shooting a nice coat of clear over it and polishing it all up. If you like the flat black look, consider doing some flat black highlights. I painted my exhaust using a flat black high temp paint, and my wheels are a flat black as well, same will be done to my stator and clutch cover over the next couple of weeks. Getting ready to slap on a black windscreen and black levers as well.
