they only need to have the same thread pitch and size, it doesn't matter at all what head they have...
what i would do, is get your allen on it and ready to go, then with your other hand use a pair of pliers around the outside of the bolt. then using both the allen key and the pliers, slowly and firmly start to twist. be careful not to make it worse. i know it's a bitch with the seat, but you should be able to make that work.
go down to ace or true value and replace them with whatever kind of bolt you want. allen, nut, - whatever so long as its the right thread and pitch (which i think is m8 1.0 if memory serves). get stainless as to avoid them rusting
