600's are more forgiving if you get a little throttle happy in the turns and Don's right, you can cowboy a 600 around a bit more. You can be a little harder on the gas with a 600 and not have to worry so much about keeping the front end down and there's not many tracks that have straight aways, to make a 1000cc bike useful.
I would be so bold to say a 1000cc bike on the track is for advanced (expert) riders...

RE: Why 1000's for the street and 600's for the track?
Back when I started riding I had a CBR600F2. I sold it and got a GSXR750, which intimidated me a bit. So I traded it in for a CBR600F3. That was over 10 years ago. In 2005 some friends got me back into it and guess what I bought... a CBR600RR. I took it out to Mid-Ohio and had a blast - I plan on doing many more track days this year.
But a month after I got the 600RR I really started to dig the 1000RR Repsol. I would come home from work and just stare at it online . So I got one. I don't think I'll take it to the track... yet. Still feel more comfortable on the 600 when it comes to control and maneuverability. Still learning how to ride the 1000, and enjoying every minute!
I still ride the 600 on the street too.
