A reduction in fuel economy is one sign of an open thermostat, because the fuel is more condensed and doesn't burn properly.

And, considering your other post, "Air leak", which points to carbs that are out of sync, which could be the source of your reduced mileage; or could be a combination of both.

*** EDIT after orig post:
I should have stated too, that lower engine temperature is *another* side effect of an open thermo.

Yes, that year should get you a 180°F thermostat. I replaced mine with that temp to get better cooling and stop pinning. I was getting overheating stalling and a lot of pinning on takeoff before replacing. I had to rev up and slip the clutch to take off or stall. It works great, no more stalling. Stock may be 195°F but I would suggest the cooler one.

There are pages of applications in this LINK for 180°F thermostat .

I average 30 - 33mpg commuting into London. Each journey is 6 miles fast then 12 miles stop-start (quite aggressive riding if I admit it). Temperature gets hot enough to turn fan on and off regularly. Idle is very up-and-down and she cuts out sometimes at traffic lights, sometimes with fan on, sometimes not.

I think carbs prob need balancing but should I also try a new thermostat?

ALSO can you fit the stat without draining the system?

Blimey, that is bad! Oh well, thats not what these bikes are about though.

Yes, on a MK1 lift the tank and its right there.

On MK2 and MK3, remove the allen head bolt from the right upper radiator cover. Use an 8mm socket with small extension to remove the two bolts in the thermostat housing. Reinstall the thermostat and bolts. Takes 5 minutes.

You will loose about a mouth full of coolant, whatever is in the thermostat housing. You do mot need to drain it as it is higher than the engine, just top off the system by removing the radiator cap after you button her up. Covering the plastic with rags is a help.

hmm, it sounds like you could benefit with the 180°F thermostat as well. I ride mostly open roads and it would nice to get feedback from you.

Note: A cooler running engine does produce more HP.

I've just bought one of these from good old fleabay after looking through the list in the link TBT put up. I looks the same as the ones in the pics and should fit.

I won't know until I get back from the rig next week though. Mind you at that price it shouldn't break the bank anyway.

I'm changing out the thermostat even though my cooling system seems fine. My thought is that after 23 years without being changed it might feel better with the new thermostat.
