138 outer and 140 inner is Stage 1 jetting
140 outer and 142 inner is Stage 2 jetting
142 outer and 145 inner is Stage 3 jetting
Going from stage 0 to 3 is a BIG jump without other tuning/modifications to the bike. I'd go to stage 1 first if you're top end is "light, lean"

'Falling on it's face on top end' sounds to me like bogging due to the main jets being too big. I agree that unless you've done the engine mods to match... fat main jets from a stage 3 kit will make you loose power... A LOT!
I think the bikes, as purchased, were already pretty rich up top... and some stage 1 kits actually had you decrease the main jet size (note that dynojet numbers don't equal Factory/OEM jet numbers, so you can't compare directly)
Did you try the OEM size jets with the Factory needles?
