I'm not sure what your mirrors look like.
But on my '97 900RRV, where the mirror stem fixes to the mirror bracket, there is a pinch bolt.
Remove the bolt and gently pry the pinch fitting apart to separate the mirror stem from the bracket.
You can then slip the rubber boot over the stem and reassemble.
If your mirrors are a bit floppy, run a junior hacksaw blade through the pinch assembly to remove a TINY bit of the metal, giving the pinch assembly a stronger grip on the mirror. I just did it to my floppy mirrors and they're now rock solid
