I grew up on deer, elk, geese/goose (whatever), grouse and duck. sometimes bear. Wild life rules..

Deer smokies are the best.

I didn't get anything in PA when I went a few weeks ago, but I'm hoping to go back and try my luck with the muzzleloader. I don't have anywhere to hunt in MD really, reading this thread literally had my mouth watering though. I love deer meat

Deer jerky and venison steaks... Bambi's mom tasted good. (as perverted as that sounds)

i still have half of that left, plus someone i know just got 4 (not him specifically, but he now HAS 4 deer) and im possibly getting some meat from them aswell.

Rare is the best way to cook Deer
+1, there is not fat in the meat, so it will dry out in a heartbeat. I cook mine almost like expensive lamb chops. Try this:

Dust the chop or steak with flour, salt, and pepper.

a little olive oil in a pan pluss some butter. After the butter foams and right when you see color in the butter add meat.

Flip it fairly quickly, you are going for rare or medium rare, not medium.

after the flip add:

Some mushroom slices (I like porcini). You can wait a minute then add sliced/chopped shallots. We don't really want color on the shallots.

Remove the meat when done leaving in the shallots/mushrooms, deglaze the pan with a shot of brandy, reduce then add the porcini/broth mix. A little pat of butter ot a little cream or both to finish will make the sauce perfect. stir and taste,of course a little salt and a lot of pepper will be needed.

drizzle sauce around the plate, don't drown the meat.

note: porcini mushrooms can be found dried. Just rinse them and put in either hot water or chicken stock for a few minutes or even just water. They will absorb the liquid and make a flavorful broth, you don't need alot of water.

enjoy, if a woman is with you don't overeat, you can get a cramp during the inevitable sex romp because this dish is so good you can't not get laid.
