We studied this a little in psychology, its because of the way the receptors in your eyes and the way its analyzed in your brain. Way over my head but i learned a few things.
look at something in the dark, If you look straight at it you cant see it, if you look next to it you will then be able to see it but as soon as you look back at that object it will not be visible again. Something to do with the sensitivity of receptors in different parts of your eye.
