Gas with seasoned pumice stone to even the heat out. And 3 years worth of drippings, seasonings and other good stuff to help with that Drakito signature flavor.

That sums it up Telgren... I used my Big Green Egg two night ago to smoke a pork shoulder and it was deee-lish.

Fire...it is men's work.

I used to swear I would never use a gas grill...I liked the whole tradition of using briquettes, and the flavor. Then, I got a gas grill, and I will never use coals again. I am ready to go in about five minutes, and I can comfortably control the heat...quick and easy!

Good point, Jimbo! You just have to watch out for too much beer while grilling. I've done my share of burning the chicken...then you have to convince your guests/family/friends that you made them Cajun Chicken...[:@]

Just tell them its a Middle Eastern recipe....
If you burn it...throw some lemon and curry on it!
Works every time....

I only wish that i could use a charcoal grill. My condo association wont let me use anything other than gas. Now i have to use liquid smoke, its ok, just not like the real thing ya know....at least to a southerner. I meet a girl recently and took her out to dinner last night and somehow we were talkin bout bbq. Of course she said that her dad makes the best ribs, they fall off the bone, took him 20 years to perfect, yada yada yada. Then she told me that his secret is that he boils them....my mouth dropped for like 10 mins. Those poor ribs...u cant boil them. That is just not right. Now i feel that it is my duty as a southerner wit a grill to make some bbq that cooked all day low and slow just so she will taste some real bbq...or at least somethin close to it.
