Default Best gearing for the track?

I'm getting ready to order a new chain and sprockets for my f2 project track bike. I'm going 520 chain and as far as gearing goes I was gonna do -1 in front and +2 in the rear. I have heard great things as far as that for the newer bikes, but would that gearing be too wheelie happy at the track, and how would that affect it with the back tire being 160 instead of 180 like the newer bikes. So what's everyones opinions on the best gearing?

Stock gearing. Stay with a 160 rear tire.In my opinion, use Bridgestone slicks.
