So far, I'm getting about what I got on my 600. High 20s to low 30s MPG - if I ride slow. I think I was revving higher on the 600, which offset the displacement increase as far as mileage. There's a pretty large variability in there based on how you ride. I don't see how anyone can own one of these things and not open it up once in a while.
If you can get away with riding your bike only, and have no car expenses at all (which I find amazing - I couldn't do it), well, then it gets a little closer. That's especially true if you already own all the gear. I'd expect the CBR to be more expensive to maintain than the CB. I've read on this board where guys got surprisingly few miles out of a set of tires.
I can tell you that the '08 CBR1K is very sweet. Light and easy to handle... I was torn between the new 600RR and the 1K too.

the mpg is much worse than my 06 gixxer thou. gotta love the cat and lean burn - not!
got a pcIII on order and a slipon ready to install. should put the mpg and driveability where it belongs.
a sportbike for a daily commuter? i would not do it. i'd consider a 919 or an interceptor

Every situation is unique. I just got a job where my commute is 41 miles each way. With my car, (modded Z28) I can get at best 18 mpg, but driving in rush hour, between 13-17 mpg. On the bike, I'm getting around 41 mpg pretty consistently as I can split traffic. So, off the top, not only am I saving a lot of time, but my gas bill on bike is $50 a week as opposed to $120 from my car. True, I'm going through tires, chain, brakes, etc..faster, but still would come out ahead from riding my bike.
If I had a Prius or Civic, I'd only be saving time, not money...I could be wrong, but I figure there wouldn't be too many Prius owners that own CBR1000's, not that there is anything wrong with owning one....
I have been thinking about getting a used Ninja 250 for the commute....hmmmmm. I dunno.

No car expenses is exactly what I plan on. I've been doing it for a while now. I get soaked on the way home sometimes but oh well. It's just water.
As of today I will be car pooling for a while though. A guy pulled out in front of me in his oldsmobile. Forks are twisted (possibly bent), Handlebar is destroyed, old cafe 1/4 fairing shattered, front fender bent, and left turn signals busted front and rear. At least he got the ticket...
