Default Bike starts, but DIES is the choke is open

I just cleaned the carbs, with the expection of the pilot screw, since I don't have the special wrench.

I cleaned them very throughly. I've done with many many times on other bikes. I even removed the choke, and cleaned as per the manual. I used carb cleaner and compressed air.

If I start the bike, it will fire up, but will die if I open the choke. It's almost as if with the choke open, no additional fuel is provided, only additional oxygen.

Any suggestions?

A choke controls the amount of air allowed into the carb., which means it controls the air to fuel ratio. it does not actually control the fuel.
