basically you change the sprockets to spin your rear wheel faster, closer to the same rpm coming out of the transmission. dropping teeth on the front sprocket will thus make the front sprocket turn quicker, better acceleration and torque, same goes if you add teeth on the rear.

only negative is that you turn a higher rpm with changed sprockets to do the same speed that you were doing before.

so you want less teeth on the front and more teeth on the rear?

Yes. The typical "kit" for a 600RR will come with a front spocket one tooth smaller then stock and a rear sprocket two teeth bigger then stock and a chain.

Plus you`ll sacrifice top speed for faster acceleration,

Should be about a 10 percent difference with the -1, +2 gearing. If 0-60 time was 4 seconds, it will now be 3.6 seconds. If top speed was 150, will now be 135. If 60 MPH was 5,000 rpm, it will now be 5,500.
